Before being nominated as Best Young chef of the Year 2019 (Brussels & Surroundings) by Gault & Millau, Maxime took the title of One Michelin Star Chef in 2017. Maxime was the sous-chef of Restaurant Bruneau ( noted 2 Michelin stars at the time and supplier to the Royal Court of Belgium). In 2018 he became the owner and the head chef of the restaurant.

Maxime has been appointed exclusively as Master Chef to operate numerous high-level state banquets for heads of states including NATO Summit Brussels 2018, the 75th anniversary of the Battle of the Bulge in Bastogne and multiple state visits.

His cuisine faithfully juggles with noble quality products. The young chef tends more and more to leave the clear paths of his former master cook while personalizing his preparations and nevertheless keeping the focus on a fairly classic register. We will continue to closely follow this talented Young Chef of the Year 2019. “
